Outdoor Cooking Primer - Smoker Corn Salsa

Summer brings my very favorite tastes - fresh veggies from the garden and Iowa sweet corn! If you’ve had Iowa sweet corn, you know it’s the best around. Boiled, steamed, roasted…everyone has their favorite way of cooking it. Here’s a new way to enjoy it and the other “fruits of labor” from your own garden or the farmer’s market! So, load up the smoker, then load up your chips and enjoy the patio!

Smoker Corn Salsa

4 ears of corn
1 Tbsp. Olive oil
Cavender’s Greek Seasoning
Cajun seasoning
4 small tomatoes, whole
2 Roma tomatoes, whole
 2 large tomatoes
½ onion sliced
3 jalapeno, halved (or as many as you want)
½ can black beans, drained
¼ cup finely chopped fresh cilantro
2 Tbsp. lime juice
1 Tbsp. mined garlic
1 shot of Worcestershire Sauce

Remove the husk and silk from the corn. Rub the ears with olive oil and season with the Cavender’s and Cajun seasoning.   Place seasoned corn, 4 small tomatoes, 2 Romas, onion slices, and 1 halved jalapeno in a smoker at 200 degrees. You will want the tomatoes and jalapeno on a grill rack. Smoke for about 45 minutes to an hour. Remove and allow to cool. Use a knife to cut the kernels off the cob. (Tip: put the small end of the cob in the tube of an angel food cake pan and cut the kernels off into the pan. Core and squish the tomatoes into a bowl (or cut with a knife if you prefer), dice the smoked jalapeno and add it, dice the smoked onion slices and add them, core/seed/dice the remaining two jalapenos and add them. Core and dice the 2 large tomatoes and add them to the mixture. Add the smoked corn kernels. Add ½ can black beans. Stir to blend. Add the chopped cilantro, lime juice, garlic and Worcestershire Sauce and stir some more.

Consume with a frosty beverage and chips…you can also top off your burgers!
